Ohhhhh 6-way 🍌 Muffins & Ice Cream

I recently made some amazing banana muffins and thought I’d share my recipe.

2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 Ripe Bananas
1/4 cup 100% virgin coconut oil
1/2 cup of chopped dark chocolate bar

Directions: Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first. Then add in the wet and chopped chocolate. Oil two muffin tins with coconut oil and or margarine. Using a paper towel.

Bake at 350 degrees F (175 degrees C) for 25:00 minutes, or until a toothpick inserted into the center comes out clean. Cool in the tray for 10 minutes before removing to a wire rack to cool completely. You can store in a plastic container in fridge for about 7 days or put in freezer for up to 3 months. Enjoy

But I wanted to make something super healthy but tasty. So I made two ingredient ice cream.

Using 3 ripe bananas

Half dark chocolate bar

Directions: Blend bananas in a blender till smooth. Wipe sides down if need be. Grate bar over the mixture and blend again. Pour into container and freeze for a few hours then enjoy.

This is what’s left except cut that in half lol.

1/4 cup black berrys
1/2 cup 100% virgin coconut oil
1 Tbs 360 double chocolate vodka
1/2 cup chocolate chips

  • 1/4 cup 100% virgin coconut oil
  • 1/2 Tbs 360 double chocolate vodka
  • 1 cup chocolate chips

Directions: Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first. Then add in the wet and chocolate chips. Spray cooking spray in 9Ă—5 inch tray.

Bake at 350 degrees F (175 degrees C) for 30:00 minutes, or until a toothpick inserted into the center comes out clean. Cool in the tray for 10 minutes before removing to a wire rack to cool completely. You can store in a plastic container in fridge for about 7 days or put in freezer for up to 3 months. Enjoy

1/2 cups chocolate chips

: Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first. Then add in the wet and chocolate chips. And a little  coconut oil for goodness.

Bake at 350 degrees F (175 degrees C) for 25:00 minutes, or until a toothpick inserted into the center comes out clean. Cool in the tray for 10 minutes before removing to a wire rack to cool completely. Enjoy

Disclaimer: For a larger batch use 1 1/2 cups of flour and bake for 30:00 mins.

Very Berry Blueberry Delight

3/2 cup 100% virgin coconut oil cold pressed

2 to 3 cups worth blueberries
1 cup chocolate chips

Directions
: Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first. Then add in the wet and blueberries and chocolate chips.

Bake at 350 degrees F (175 degrees C) for 30:00 minutes, or until a toothpick inserted into the center comes out clean. Cool in the tray for 10 minutes before removing to a wire rack to cool completely. Enjoy

Disclaimer: I might use less blueberries the second time around it all depends on how blue you want yours to be!.

Lana’s Banana Bread Suprise

1/2 cup 100% virgin coconut oil cold pressed
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
5 mini boxes of smarties
1/2 cup home made apple sauce
2 bananas, sliced or mashed with a fork. Side tip you can use frozen just de thaw them. And if you have fresh you can microwave to get them to soften up.

Directions
: Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first.

Take your cold pressed coconut oil and put into 1/2 half cup measuring cup then take hot water using a separate small dish to warm the oil, Or microwave for 45secs

Mix wet into dry. Then fold in bananas, apple sauce & smarties.

Bake at 350 degrees F (175 degrees C) for 30:00 minutes, or until a toothpick inserted into the center of bread comes out clean. Cool in the tray for 10 minutes before removing to a wire rack to cool completely. Enjoy

Lana’s Decadent Banana Muffens

1/2 cup 100% virgin coconut oil cold pressed
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Hershey’s chipits Pure semi-sweet chocolate chips
1 cup crushed pecans
1 cup Organic Shredded coconut unsweetened
2 bananas, sliced or mashed with a fork. Side tip you can use frozen just de thaw them. And if you have fresh you can microwave to get them to soften up.

Directions: 
Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together all the dry ingredients first.

Take your cold pressed coconut oil and put into 1/2 half cup measuring cup then take hot water using a separate small dish to warm the oil,

Crush up your pecans, chocolate chips, it’s fine if you get bigger chunks. As well shredded coconut. Mix wet into dry. Then fold in bananas, pecans and chocolate chips and shredded coconut.

Taking non stick Muffen trays fill them with paper cups, fill each one but leave some room for them to rise. Bake at 350 degrees F (175 degrees C) for 30:00 minutes, or until a toothpick inserted into the center of the muffens comes out clean. Cool in the trays for 10 minutes before removing to a wire rack to cool completely. Enjoy

Original recipe makes 12 to 15 Muffens

100% virgin coconut oil
1/2 stick of butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1 cup crushed pecans
2 bananas, sliced or mashed with a fork. Side tip you can use frozen just de thaw them.

Take your half stick of butter and coconut oil and melt in microwave and pour into a half cup measuring cup. Crush up your pecans and chocolate chips, it’s fine if you get bigger chunks. Pecan Chocolate Chip Banana Bread

Original Recipe Makes 1- 9×5 inch loaf

Half cup crushed pecans
Half cup chocolate chips
1 stick butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 medium bananas, sliced or mashed with fork – side tip you can use frozen just make sure to thaw them.

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9Ă—5 inch loaf pan, I used cooking spray. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the bananas, pecans and chocolate chips.

Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
