Easy Peasy Chicken & Veg


Things You Will Need

  • Mrs Dash Chicken Seasonings
  • Boneless skinless chicken breast
  • Mixed frozen vegetables
  • EVOO aka Extra Virgin Olive Oil
  • Baking pan
  • Tinfoil

Remove a big enough sheet of tinfoil, place on baking sheet. Place chicken breast on one side and the frozen mix veg on the other side. Sprinkle seasoning on chicken, dribble some EVOO over both. Add salt and pepper to veg if you wish. Close tinfoil and roll the sides to make a package.

Bake on high at 400 for 25minutes. If the chicken is thicker just bake for longer.

Side note this dish also works well with fish.




Lana’s Thai Baked Chicken & Coconut Oil Potato’s



  1. Skinless boneless chicken boob
  2. Thai Spice
  3. 6 or 7 small potatoes cut into cubes
  4. Baby carrots

Turn oven on 400, take the chicken boob and put spice on both sides, bake on baking sheet for 30 mins, boil hot water with potatoes for about 15 mins or and till fork easily slides through. Remove from water and drain then put back in pot with some margarine and coconut oil and some Mrs Dash and bam done. You can use margarine if you want or just coconut oil all up to you.

The baby carrots I cut into halves and then steamed for about 5 minutes. And bam your done. The chicken is moist and cooked to perfection and of course this is for people who are cooking for them selves with no one else. Also I made enough mashed potatoes and steamed carrots for leftovers.


Dr. Oetker Pizza – Giuseppe Pizzeria


Okay so personally for the most part Dr Oetker pizza typically tastes like cardboard it normally has no flavour and the toppings are bleh. But today I decided to try their newest one which is the Giuseppe Pizzeria thin crust deluxe. And I have to say for a frozen pizza it could compete with Delissio it might even taste a little better. I don’t always want to cook on Fridays and so I treat my self to a frozen pizza.

Turn on the oven shove it in and wait a little bit and bam. I typically will have two slices with a salad and that’s my dinner. I have to say this pizza was super tasty. It had enough cheese on it to make it great. The tomato sauce had great flavours and the toppings themselves were also very delicious.

I would eat this again for sure. And that is saying a lot because their normal pizzas are crap. So much so I wouldn’t even feed them to my dog. Anywho I hope to try the other flavours but I do love a good deluxe pizza.

Lana’s Fabulous Chicken Baked Meat Balls



1 lb lean ground chicken
Half diced onion
2 eggs
Bread crumbs
Olive oil
Butter or margarine
Tomato sauce

Mrs Dash, Garlic & Herb
Cayenne Pepper
Dried chives
Dried parsley
Salt & Pepper

In a large bowl combine seasoning as well ground chicken, diced onion, 2 eggs, about a cup or so of bread crumbs you kind of have to eyeball it. Then get a fry pan put in some olive oil and margarine and set to medium heat. Roll the mixture into small balls and place in fry pan. After cooking them for about 5 or 6 minutes turn heat off.

Taking a large oven safe dish, spray bottom with cooking spray and take half of the jar of the tomato sauce and spread on bottom you can use the whole jar if you wish. Place meat balls on top and put into the oven at 400 and bake for 25 minutes.

Cook up your favourite pasta and a baked potato or whatever your veg is and enjoy.

Lana’s Delicious Pasta With Fried Potatos


You will need:

  1. 1 pound lean ground pork
  2. macaroni pasta
  3. 1 can of diced tomatoes, I used Irresistible’s life smart herbs and spices diced tomatoes no salt added
  4. seasoning for the pork of your choice
  5. 3 large to medium potatoes skin on
  6. strips of any coloured sweet pepper you want, I used orange and yellow
  7. 1/2 of a sweet onion diced
  8. 2 tablespoons of minced garlic
  9. seasonings of your choice

Directions: start with cutting your potatoes in 4 and then dice a cross to make cubes, also dice up your peppers in cubes. Turn your skillet on medium heat and add in a touch of oil whatever you want. I used canola oil but a very small amount. Throw in your potatoes and cook and till golden. Once golden almost done add in the peppers and onion.

While your potatoes are cooking also in a small fry pan and pot start cooking your ground pork and start your Boiling your water for the pasta.

Cook your pork on medium heat in a non stick fry pan, Add in your spices I used garlic powder as well cayenne pepper and steak and chops seasoning. Once cooked down I also added in the minced garlic. And the rest of the diced onion. Once the pork was cooked all the way through I then added in the diced tomatoes.

By this time your pasta is cooked and all you have to do is drain your pasta and there you have it a great meal that’s healthy and tasty.


Lana’s Fabulous Pork Thai


Using Thai Seasoning Mix

Thai Spice, Salt, Star Anise, Cumin, Cinnamon, Clove
Minced Garlic & Chili, Salt, Minced Garlic, Crushed Chili, Ginger, Coriander, Onion.

Half onion diced.

3 cloves garlic diced.

Lean Ground Pork.

1 cup steamed veggies of any kind.

One handful of spinach.

5 spoonfuls of vegetable broth.

Salt and pepper to taste.

Little bit of olive oil.

Side note if you don’t want all the salt forget the added salt and pepper to taste.

Directions: turn burner on medium heat. Using a large skillet put in the olive oil and lean ground pork. As the ground pork cooks add in your seasoning. Once the pork has cooked 98% through move that portion over to the side of the skillet and add in the onion. Once that has softened stir everything together and then add in your garlic. If you have a steamer steam your veggies. And put to the side.

Once the garlic has been mixed into everything, then in the middle of your skillet move everything over and make a circle in the middle. Then add in your steamed veggies and 5 spoonfuls of veggie broth they can be big or small. Also add in a handful of spinach and put the lid on. Let that do its thing as you clean up some dishes that you made hehe. About 3 minutes or so to get the spinach to wilt.

Once done that lift the lid and stir everything together and bam. Cook up some pasta and enjoy.

Easy Apple Sauce

For mine I used as follows.

1. Small to medium pot

2. 3 apples two red one yellow peeled and sliced into cubes

3. 1/4 cup water

4. As much cinnamon as you like

5. Small spoon of sugar

Cook on medium heat and till apples get soft enough to mash with a fork. 20 minutes or so eye ball it but keep an eye on it. And if need be add more water which I did but it’s not runny and season to taste pretty much it’s not that hard. Simple and will go great with many dishes or eat by the spoonful hehe.

Another Dinner Delight


So last night I cooked up a mean meal for my party of one lol. I cooked grilled chicken with yellow and orange sweet peppers steamed up some green peas with carrots and a baked potato and on the side some cucumber slices.

For the grilled chicken I used some olive oil extra virgin, the chicken I cut into strips and seasoned with garlic powder  paprika and chives. I cooked the chicken for about 15 minutes give or take. Then threw in the sweet peppers let that wilt then added a little white wine cause why not lol.

For the steamed green peas and carrots it came out of a bag from my freezer lol. I put it in my small steamer and put that in the microwave. Same with my baked potato I pressed the button on my microwave and bam that was done lol. And the slices of cucumbers I cut up and put on a plate and put some fresh cracked pepper and some sea salt.

And that was my dinner. The chicken in a white wine sauce is sorta my go to recipe. I’ve cooked it a bunch of times now and it’s easy to do.

Tonight I decided to bake some potato wedges, grill up some chicken strips and have a side dish of pasta and veg. I got the potato wedges recipe from the Food Network App, I used two potatoes instead of the four it called for and I also used a few ingredients that I had on hand for flavouring but other wise I followed what it said and they turned out amazing. As for the grilled chicken I just thought of it and went on a whim. And the pasta I used was left overs and I used frozen veg and just cooked them up in the micro with the pasta.



Kraft Dinner Delight


You will need:

  • Two boxes of Kraft Dinner
  • A Caserole Dish
  • Non stick cooking spray
  • Hot Sauce
  • Mrs Dash of your choice
  • Unsalted Chicken Broth
  • One Can of Tuna
  • One cup Green Peas
  • Margarine
  • Cream cheese
  • Bread crumbs
  • Graded cheese of your choice

Bring a medium pot to a boil I eye balled the water. Maybe 4 cups worth whatever the box says lol. I know not very helpful but it’s easy to boil water trust me. But double it because you’re doing two boxes. I’m just a pro haha. Next grate your fave cheese in a bowl. Open your can of tuna and drain the water out also put that into its own small bowl if you want though you don’t have too. In a steamer put some water in it and then put your green peas to steam and till cooked through. I have a small microwave steamer that I used.

Once the pasta has cooked drain it in a drainer and put aside. Take some chicken broth about half a cup full and your margarine about a small spoonful or so tho you may add more it’s really up to you and mix together over low heat. Add in about a small spoon full of cream cheese and mix and till blended. Once blended add in your pasta. Stir everything well so that all the pasta is coded with the cheese sauce then add in your tuna and green peas followed by your hot sauce and Mrs dash.

Taking your casserole dish after you have sprayed it with your non stick spray, evenly spread out your Kraft Dinner Delight sprinkle your bread crumbs over top along with your favorite graded cheese and bake at 350 for 20 minutes and till the top has a nice golden colour.

Its easy to do pretty healthy and it tastes great. Who says Kraft Dinner is bad for you never tried my  recipe hehe, also if you don’t want to use the powder package that comes with the box you can just  substitute with using all graded cheese for the sauce as well for after you have put the bread crumbs on then more graded cheese on top of that. It’s really whatever you prefer.
